ASCRC carries out R&D on lactic acid bacteria and through its commercial production unit supplies cultures for >60% of all Cheddar andd Mozzarella production in Australia. It has one of the largest culture collections in Australia and accordingly can customise starter requirements for all dairy fermentations.
